This birthday dinner idea is perfect for a party because it’s hearty, filling, and can be made ahead of time. Plus, it’s a memorable meal that’s sure to impress your guests!


  • 2.5 – 3 pounds boneless beef short ribs
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/3 cup cooking sherry or Worcester sauce.
  • 28-30 ounces of beef broth
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • Yellow small potatoes, skin on, washed & dried
  • Sprig of fresh thyme or rosemary


-Season the boneless short ribs with salt and pepper. Set the pressure cooker to Sauté – High and add oil. Sear the short ribs for 3-4 minutes on each side or until browned.

-In a small bowl, combine the minced garlic and olive oil. Heat for about a minute before adding the sherry. Scrape out any browned bits from the insert with a wooden spoon and add them back in. Add beef broth, seasonings, a sprig of fresh thyme or rosemary, and potatoes to the pot.

-Close and lock the pressure cooker’s lid. Set the pressure cooker to Pressure Cook – High while following these steps. After 15 minutes of natural release, manually release any remaining pressure.

-When the pressure has gone, and the silver valve has opened, open the cooker. Plate with the potatoes slightly mashed.

  • 1 (2-pound) salmon fillet
  • Kosher salt and freshly ground black pepper, to taste
  • 3 tablespoons olive oil
  • 1/4 cup fresh lemon juice
  • 6 cloves garlic, minced
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano


-Preheat the oven to 400 degrees F (200 degrees C). Season salmon with salt and pepper to taste. Heat olive oil in a large ovenproof skillet over high heat.

-Add salmon and cook just until opaque around the edges, about 1 minute per side. Remove from skillet.

-Add lemon juice, garlic, thyme, basil, and oregano to the skillet; cook, stirring constantly, until fragrant, about 1 minute. Return salmon to the skillet.

-Place into oven and roast until completely cooked through, reaching an internal temperature of 145 degrees F (63 degrees C), about 12-15 minutes. Serve immediately.

  • 1/2 cup butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk


  • 1/2 cup butter, softened
  • 2 cups confectioners’ sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract Milk, for thinning


-Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round baking pans.

-In a large bowl, cream together the 1/2 cup of butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in 1 teaspoon vanilla. In another bowl, whisk together the flour, baking powder, baking soda, and salt.

-Add the flour mixture to the creamed mixture alternately with the buttermilk; mix well. Pour batter into prepared pans.

-Bake for 30 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Cool cake layers for 10 minutes; remove from pans to wire racks to cool completely.

-To Make Frosting: In a large bowl, cream together 1/2 cup butter, confectioners’ sugar, cocoa, and 1 teaspoon vanilla until light and fluffy. If the frosting is too thick, add milk a little at a time until desired consistency is reached.

-Place one cake layer on a serving plate; spread with frosting. Top with the remaining cake layer. Spread top and sides of cake with remaining frosting. Enjoy!
