Ingredients:

  • 2 lb. jumbo shrimp, peeled, deveined, and tails removed
  • ¼ teaspoon salt
  • 2 tablespoons vegetable oil
  • ¼ teaspoon ground black pepper
  • 1 + ½ cups heavy cream
  • 2 tablespoons butter
  • 1 tablespoon garlic, minced
  • 2 tablespoons white wine
  • 1 teaspoon Italian seasoning
  • ½ cup white cheddar cheese, shredded (or grated Parmesan cheese)
  • 1 tablespoon fresh parsley, finely chopped

Directions:

1. In a large pan, heat 1 tablespoon of oil for 2 minutes until the hot oil is sizzling hot. In the same pan, add the shrimp and fry for 2-3 minutes on each side until they are pink and cooked through—season with salt and pepper to taste. Place in a serving dish to cool down quickly.

2. In a large saucepan or stockpot over medium-high heat, melt the butter. When it begins to foam and bubble, add the wine and stir until completely combined (about one minute).

3. In a small saucepan, combine heavy cream, Italian seasoning, and white cheddar. Stir until well combined, and the sauce has come to a simmer. Reduce the heat to medium and stir continuously until the sauce is thickened enough for your liking.

4. Toss the cooked shrimp in the skillet once more before serving with pasta, rice, or mashed potatoes. Garnish with parsley and serve right away.

2. Lemon Garlic Chicken Thighs With Roasted Broccoli

1. Preheat the oven to 425 degrees F (218 degrees C). In a small bowl, whisk together garlic powder, onion powder, cumin, salt, and black pepper.

2. Place flour in a shallow dish. Dredge chicken thighs in the flour mixture until coated and set aside.

3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for about three minutes per side until golden brown.

For the steak:    

  • two 12-ounce New York strip steaks, trimmed
  • salt and black pepper to taste
  • ¼ cup vegetable oil

For the sauce:   

  • ¼ cup heavy cream
  • ¼ cup chicken broth or beef broth
  • ½ teaspoon Dijon mustard
  • green peppercorns, drained and crushed (or use freshly ground black pepper)
  • salt and black pepper to taste

Directions:

1. Season steaks generously with salt and black pepper on both sides. Heat oil in a large skillet over medium-high heat. Add steaks and cook for about three minutes per side for medium-rare or until desired doneness is reached.

Ingredients:

  • two lbs. beef chuck, trimmed and cut into one-inch cubes

  • salt and black pepper to taste

  • ¼ cup all-purpose flour

  • ¼ cup olive oil

  • one large onion, diced

  • three cloves of garlic, minced

  • one lb. carrots, peeled and cut into one-inch pieces

  • one lb. red potatoes, diced

  • two cups chicken broth or beef broth

  • one bay leaf

  • salt and black

  • pepper to taste

Directions:

1. Season beef cubes generously with salt and black pepper. Place flour in a shallow dish. Dredge beef in the flour mixture until coated and set aside.

2. Heat olive oil in the Instant Pot, and ensure it is set to the “Saute” function. Add beef and cook until browned on all sides. Remove beef from the pot and set it aside.

3. To the same pot, add onion, garlic, carrots, potatoes, chicken broth or beef broth, bay leaf, salt, and black pepper. Stir to combine. Return beef to pot and stir to combine again.

4. Close the lid of the Instant Pot and seal the valve shut. Set to “Manual” mode for 60 minutes at high pressure. When time is up, allow the pot to release pressure naturally for about ten minutes before opening the valve to release any remaining steam.

5. Serve beef stew with a side of crusty bread. Enjoy!

Ingredients:

  • 8 ounces of fettuccine noodles

  • salt and black pepper to taste

  • For the sauce:

  • ¼ cup butter

  • ¼ cup all-purpose flour

  • two cups milk

  • one cup chicken broth or beef broth

  • ½ teaspoon garlic powder, salt, and black pepper to taste

  • one cup of shredded Parmesan cheese

  • ¼ cup chopped parsley leaves

Directions:

1. Cook fettuccine noodles in a pot of boiling water according to package instructions. Drain and set aside.

2. In the same pot, melt butter over medium heat. Stir in flour and cook for about one minute or until the mixture is smooth and bubbly.

3. Slowly whisk in milk and chicken broth or beef broth until no lumps remain. Stir in garlic powder, salt, and black pepper. Bring to a simmer and cook for about 8 minutes or until sauce has thickened slightly.
